"We wanted to be sure that we could offer, in our restaurant, an excellent wine that was organoleptically of the highest quality, from a not large production, that the winemaker was a lover of his work and that above all he was the owner of the vineyards. A real wine! But with a difference, having that great quality on tap. Like in a real cellar. It was not easy, wineries that make great quality wine and small productions, only put them in glass bottles. After a selection process, we understood that in order to reach our goal and thus have a great quality we had to fill ourselves, together with them. We have turned to the Tuscan Enoitalia that produces filling machines for wine and from the Swedish Quadpak to have the 20 liter Cheertainer, the only authorized and tested by the United Nations".
"We went to the wineries and we filled the containers together".

Makes a wine of a superior quality. From the vineyards are obtained the Sangiovese, Canaiolo, Cherry and Colorino grapes, in the best Chianti tradition, flanked by Cabernet Sauvignon, Cabernet Franc, Merlot, Petit Verdot , Tannat and Syrah, produced from grapes planted in soils with different altitudes, from 250 to 600 m.s.l., together with Sauvignon Blanc and Gewurztraminer, and all, thanks to the calibrated temperature ranges, enjoy rich and intense aromas.
The vineyards underline and distinguish a path, which is to be considered an ideal model for respect for nature, started in 1999, when the company adopted the "Discipline for Biological Certification", which was then obtained in 2002.


The vineyards, are characterized only by Tuscany vineyards, such as Pugnitello, Foglia Tonda, Abrosite, Abrusco, which extend to the protected oasis of the Padule di Fucecchio. This project was born in 2005 with the idea of rearranging some vineyards in Fucecchio.
Many of these old vines belong to local peasants and were in a state of neglect for several reasons: some related to the seniority of the peasant farmers and others due to poor profitability. In all these years the project has evolved; today 14 hectares of ancient vines are restored, converted into organic farming and in collaboration with 14 old peasants, transferring to the young, experience and love for the vine.

In Abruzzo, have been producing wine for 5 generations, the Maligni farm covers an area of ten hectares of vineyards, cultivated mainly with the Montepulciano d'Abruzzo, Pecorino, Cococciola varieties that, for the particularly suitable production area stands out for its excellent quality.
The Maligni winery, is the result of a happy symbiosis between tradition and innovation, for this reason the Art of their work consists in transforming the precious gifts of nature into excellent wines, always having an eye for the environment and for the quality .
Even Tripadvisor has rewarded their passion with a prestigious award, the only winery in Abruzzo to receive the Certificate of Excellence.

When, in the '80s, "biological" was not yet a magic word, the Pozzobon brothers decided to throw calendars on dates and learn to listen only to the needs of their plants. So they were among the very first in the area to drastically reduce the use of chemistry in the vineyard. The long path they have undertaken with great commitment and conviction towards converting to organic farming, has been crowned in 2012 by obtaining the certification. The extra dry Prosecco DOC is produced with the vineyards raised in Guyot and Capovolto in the Belvedere area of Volpago del Montello, the Treviso Prosecco DOC is vinified according to the traditional white system at low temperatures, with subsequent foaming in the autoclave. Quality sparkling wine with fine and persistent perlage, it combines fruity and floral aromas to the nose with a fresh and harmonious taste in the mouth.
